
Sometimes I feel like it is ok to lie to your kids…providing it’s in their best interests. You say- “YES! YES, these Banana Pancakes are REAL pancakes … like the ones you get in restaurants! I thought we would have a special treat for lunch today!”. Miss I can be a bit of a monster when it comes to food. One week she will happily eat bananas and the next she tells me she hates them. So I do what any loving parent does and trick her into eating things because they’re good for her.
These are super quick and easy to make, are gluten and dairy free and you don’t need to worry about having flour on hand to give the kids a pancake fix!
What you’ll need
-1 medium sized banana
-2 eggs
-1/2 tsp cinnamon (either sprinkle in the batter or on top of cooked pancakes, is optional though)
– Cooking spray or butter
What to do
– Mash a banana in a bowl, add in your eggs and cinnamon and mix until smooth.
– Whack a pan on medium heat and spray with a little cooking oil or grease with butter. Add spoonfuls of the mix and cook 1-2 minutes each side.
– Serve with fresh fruit or yoghurt for dipping
