It’s hump day and hump day calls for cute wee delicious cheesecakes because I need to forget that it’s not Friday yet! Like every week, this one seems to be flying by pretty quickly and apparently so is the year! Someone said to me today “Do you know there is only 151 days until Christmas?” … I kindly told her to shut the fuck up. NO BODY needs to be thinking about that shit just yet- It’s still July.. just!
Right! I ain’t going to waffle today. Lets get on to the good stuff because I’m full of the flu and want to take a nap. Selfish right?! Not only are these little cheesecake beauts super quick/easy to make, they taste delish AND they’re the perfect wee size for a single serve so you don’t have to feel a whole heap of guilt when you polish one off. If you aren’t an Oreo fan then use whatever bikkie you want- Choc chip cookies, caramel Tim Tams, Mint Thins, whatever floats your boat babeses!
What you’ll need
– 16 oreo cookies
– 170g cream cheese
– 200g condensed milk
– 1 tsp vanilla extract
– mini jars or glasses
– ziplock bag and rolling pin for smashing cookies
What to do
– Smash up you oreo cookies and fill each jar or glass 1/4 of the way with the oreo crumbs. Set aside a little bit for sprinkling on top and the rest will be mixed into your cheesecake mixture.
– In a mixing bowl, add in your cream cheese, condensed milk and vanilla extract and beat until smooth. Fold in remaining Oreo crumbs and mix until combined.
– Using a piping bag or teaspoon, fill your jars or glasses with the cheesecake mix until just fill. Sprinkle with the Oreo crumbs and into the fridge they go for an hour or so to firm up. Serve as is or drizzle with some choccy sauce and enjoy!
